Name them one by one!

A great way to notice our blessings is to write them down. And today we are going to write them down on COOKIES!

By the end you’ll have a plate full of things to be thankful for.

Sugar Cookies

Ingredients:

  • 2½ cups (318 grams) all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon fine sea salt
  • 2 sticks (226 grams) butter at room temperature
  • 1¼ cups (250 grams) granulated sugar, plus ¼ cup (50 grams) for rolling
  • 1 large egg plus 1 egg yolk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350° F (177° C).
  2. In medium bowl, whisk together flour, baking powder, and salt.
  3. In large bowl, mix butter and 1¼ cups sugar for about 2 minutes, until light and fluffy. Mix in the egg, yolk, and vanilla. Slowly beat in the flour mixture.
  4. Place the remaining 1/4 cup sugar in a shallow dish. Divide dough into balls, then roll in sugar to coat evenly. Place on the baking sheets, spacing them 2 inches apart. Flatten slightly with the bottom of a measuring cup.
  5. Bake for 10 to 12 minutes, or until cookies begin to brown but are still a little wet looking in the middle. Cool completely.
  6. When sugar cookies are cool, decorate them with something you’re grateful for using the icing recipe below!

Icing

Ingredients:

  • 1 ½ cups confectioners’ sugar
  • 3 tablespoons butter, softened
  • 1 tablespoon vanilla extract
  • 1 tablespoon milk, plus more as desired
  • 3 drops food coloring of your choice (optional)

Instructions:

  1. Beat sugar, butter, vanilla, and 1 tablespoon milk in a large bowl until creamy.
  2. Mix in more milk, 1 to 2 drops at a time, to reach desired spreading consistency. Stir in food coloring.
  3. Transfer the icing into a small plastic baggie. Cut the tip of the bag a tiny bit and use it to pipe the frosting onto the cookie.
  4. Write a word or draw a picture to represent something you’re grateful for on each cookie!
